The pigment is obtained by solvent extraction of turmeric and purification of the extract by crystallization. Curcuminoids are natural phenols that provide a bright, strong yellow colour shade and antioxidant effect.
Curcumin is an oil-soluble pigment, practically insoluble in water at acidic and neutral pH that is available in convenient water dispersible forms that are used in a wide range of foods and beverages with various health benefits.
